If you take a road trip inland from the Australian coastline you are sure to see large sprawling pale grey/green bushes known as Saltbush. These plants thrive in our dry outback and not only hold the soil together during long periods of drought but also provide a food source for both humans and animals.
You can use the fresh leaves in a stir fry. The dried leaves can be added to a bread mix or dukkah or seasonings. They can also be made into chips.
At certain times of the year the bush flowers which enables the gathering of seeds. You can use them for planting or you can use them as croutons on soup or as a bread topping.
